Coconut Shrimp

De-vein Shrimp 16/23 count and pat dry.

Set up 3 stations, Egg wash, Cornstarch and Dried Coconut Flakes.

Dredge Shrimp in Cornstarch, Egg wash and finally coconut flakes.

Repeat this a second time and place on a drying rack for a minimum of 15 min.  This makes a crunchier crust. 

In a shallow pan heat oil to 350 degrees and place a few shrimp in the oil and cook until golden brown.

Dip in the jelly! Repeat!

 

Try adding a tablespoon of jelly to a 1/4 cup Soy Sauce…For the best Fried Rice!

Try the same with your favorite Mayonnaise…For the best Fish Taco Sauce!
